  • 2 tbsp butter, melted
  • 100 g brown sugar or Demerara sugar
  • 4 tsp ground cinnamon
  • 2 tsp mixed spice (optional)
  • 65 g caramel sauce, store-bought or homemade

Instructions
  1. Preheat oven to 400°F (200°C) and butter a baking dish or line it with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface into a 1/4-inch thick rectangle.
  3. Brush with melted butter, then sprinkle evenly with brown sugar, cinnamon, and mixed spice if using.
  4. Roll the pastry tightly from the narrow end into a log.
  5. Cut into 12 equal slices using a sharp knife.
  6. Arrange the slices in the prepared dish, leaving about 1/2 inch of space between each roll.
  7. Chill in the refrigerator for 20 minutes before baking.
  8. Bake for 20–25 minutes, or until puffed and golden brown.
  9. Remove from the oven and drizzle with caramel sauce before serving warm.
