A classic Italian salad gets a delicious twist with the addition of blueberries, which also adds the pop of color needed to create a red, white, and blue caprese salad for 4th of July parties!

  • 2 cups cherry tomatoes (sliced in half or grape tomatoes)
  • 8 ounces fresh mozzarella pearls (drained)
  • 2 cups fresh blueberries (rinsed)
  • small handful of fresh basil leaves
  • 1/4 cup balsamic glaze
  • 1-2 teaspoons extra virgin olive oil (a drizzle)
  • coarse sea salt and pepper (to taste)

Method
 

Instructions
  1. Combine tomatoes, mozzarella, blueberries, and basil leaves in a serving bowl and toss together to distribute ingredients evenly.
  2. Drizzle olive oil and balsamic glaze over the top.
  3. Garnish with freshly cracked black pepper and coarse sea salt.
  4. Toss to combine just before serving.
