  • ½ cup soy sauce
  • ¼ cup honey
  • ¼ cup ketchup
  • 2 cloves garlic, minced
  • 1 teaspoon fresh grated ginger
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon red pepper flakes optional, for a hint of heat
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Pineapple chunks and sliced green onions for garnish

  1. Layer the Chicken: Place the chicken breasts in the bottom of your crockpot.
  2. Mix the Sauce: In a medium bowl, whisk together the pineapple juice, soy sauce, honey, ketchup, garlic, ginger, black pepper, and red pepper flakes until well combined.
  3. Pour and Cook: Pour the sauce mixture over the chicken. Cover and cook on LOW for 4–6 hours or on HIGH for 2–3 hours.
  4. Thicken the Sauce: In a small bowl, mix cornstarch and water to form a slurry. Stir it into the crockpot and cook for an additional 30 minutes, or until the sauce thickens.
  5. Serve and Garnish: Serve over a bed of rice and top with fresh pineapple chunks and sliced green onions.
