  1. Preheat oven to 400°F. Lightly coat a 6-cup muffin tin with nonstick spray.
  2. In a large mixing bowl, whisk together the egg, milk, and oil until smooth.
  3. Add flour, sugar, baking powder, chai spice, and salt to the wet ingredients. Stir gently until just combined—avoid overmixing.
  4. Divide batter evenly among the muffin cups using a large scoop or spoon.
  5. Sprinkle tops with sanding sugar, if desired.
  6. Bake for 18–20 minutes, or until muffins are golden and the tops are set.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling.
